What can we say… Beauty is in the eye of the beholder! This is truly God’s country! We will be back with all of our loved ones.

Poached orange eggs
This may sound simple, but there is a lot of planning that goes in to it. Tables, chairs, grills and firewood all have to be taken to the site the day before. On the day, checklists have to be tripled checked, glasses packed securely, and all the ingredients for the food taken safely across.
After a relatively long game drive all that most people can think of is getting back to the lodge and having that well deserved breakfast. Suddenly your Ranger turns on to a different road not too far from the Lodge which, for those with a slight grasp on the road networks- does seem strange indeed!
Imagine the surprise when you stop in the middle of the bush, with fully laid tables, umbrellas out, and beautiful aromas of bacon wafting through the air.
After washing your hands in warm water, one thing that always grabs people’s attention is the half oranges arranged on the outer edge of the fire. This is a Jaci’s specialty- what we call our ‘Poached Orange Eggs’.
The night before, as always- Oranges are squeezed for our Fresh Orange Juice in the morning. We then keep these half ‘shells’, which are then used to put an egg in. The shell is put directly on to the coals- and allowed to “poach”.
Originally, these poached eggs used to have Mozzarella both on top and below- which gives a true taste sensation!
We have found that a large number of guests won’t touch a poached egg whilst in camp. However, we have found that with the fascination of this method of cooking- Everyone tries it- with great results!
Next time you are here- cross fingers that there will be a bush brunch- and most certainly give our eggs with a citrus twang a try! You won’t regret it- and most certainly won’t forget it!
