Passionfruit cheesecake
What a delicious dessert! We tried this cheesecake as something new and it didn’t disappoint us, in fact we even decided to make this our dessert for our combined Tree & Safari Lodge New Years Eve dinner last year.
For the crust you will need the following:
1 packet of biscuits – crushed into crumbs, this can be mixed with 1 tsp cinnamon and about 90 ml of melted butter. Stir this mixture very well until they combine. Press the crumbs onto the bottom of a 25cm spring form tin and bake for 10 minutes until lightly browned. Allow this to cool.
For the filling you will have to sprinkle 2 table spoons of gelatine into 4 table spoons of cold water and leave it to thicken – it should resemble a sponge.
Beat 460 grams of smooth cream cheese and 2 cups of plain yogurt with 1 tin of condensed milk. Add 3 table spoons of lime cordial as well as ¾ cup of lemon juice to the cheese mixture. Melt the gelatine in the microwave on high for 30 seconds. Take special care not to overheat the gelatine mixture, as if it is heated too close to the boiling point, it's best to discard it and start again. Boiling reduces the gelatine’s strength and causes a top film to form, which in turn causes lumps in the batter.
Add the melted gelatine to the cheese mixture and beat thoroughly to mix everything together. Taste the mixture and add more lemon if it is too sweet. Pour the filling into the crust and refrigerate till it is set.
Decorate it the way you want and serve. Our favourite topping is passionfruit pulp, which has been heated and a little sugar added together with maizena for thickening. This forms a jelly like substance which can be poured over the cheesecake before allowing everything to cool and set in the fridge.
