You’ve done it again! Our repeat visit was every bit as magical as our first, two year ago.

Wonderful game drives, (we saw a cheetah today) excellent food, superb hospitality and great weather too. I think we’ll be back for a third time and more. Thank you so much to everyone.

Double chocolate brownies

  • 200g dark chocolate, broken into pieces
  • 100g butter
  • 2 tablespoons water
  • 125g castor sugar
  • 2 teaspoons vanilla essence
  • 2 eggs, beaten lightly
  • 40g flour
  • 150g white chocolate, broken into large chunks

Place the dark chocolate into a pot with the butter and water. Stir over a very low heat until melted and the mixture becomes smooth.

Add the sugar and keep stirring until you're satisfied that everything has combined into a thick chocolate paste. Take the mixture off the heat.

Add the vanilla essence, egg and flour and stir well, until the mixture combines.

Stir the chunks of white chocolate into the mix, and as they show signs of melting around the edges, stop stirring. The mixture is now ready for baking.

Line a 20cm square tin with foil and pour the mixture into it. Bake for 35 minutes or until firm on top. When cool, cut into squares, rectangles or even circles – whatever you enjoy most!

Now anybody can put together chocolate brownies, so we like to personalise our creation, sometimes adding only half a portion of chocolate and supplementing it with mint chocolate, othertimes saving the white chocolate chunks to be added only after pouring the mixture into the tray for setting and baking.

Adding Macadamia or pecan nuts also works a charm.
